An Outstanding Chablis with White Flower Aromas
Considered one of the most prestigious winemakers in the Chablis appellation of Burgundy, Vincent Dauvissat manages almost 23 acres of vineyards in some of the best crus of the region, including Premier Crus like Vaillons, Sechets and Forest and the Grand Crus of Preuses and Clos. The old vines of Chardonnay extend their roots deep into hillsides of Jurassic limestone, the flagship soil of the region. Dauvissat typically limits yields to 50 hectoliters per hectare and practices the traditional winemaking methods of his family. The wines spend at least one year in oak, a part of which is new each vintage. This results in very complex wines that are built to evolve over the years in the bottle. The Chablis Village 2015 by Vincent Dauvissat is a Burgundy white wine made with 100% Chardonnay from a parcel directly facing the Premier Cru La Forest. The vines grow in Kimmeridgian soil, which lends a superb richesse to the finished product. Transcending its modest "village" appellation, this wine has essentially become a model for "Chablis village" wines, expressing the quintessence of the Chablis terroir with great intensity and balance.The Chablis Village 2015 by Vincent Dauvissat is wonderfully complex and harmonious on the nose, exuding notes of white flowers (hawthorn), verbena and water lilies, along with touches of citrus (lemon and orange peel) and very subtle eucalyptus towards the finish. These aromas are beautifully balanced with a delicate chalky and smoky minerality, the unmistakable signs of its terroir of origin. On the palate, this wine is very precise, straight and energetic with a generous body and silky texture. The length is quite impressive, marked by notes of citrus and white fruits.
