The estate
After searching for the ideal terroir for some 6 years, Sir Peter Michael and Lady Michael acquired 630 acres of volcanic ridges on the western slope of Mount St. Helens in Knights Valley in 1982.
This estate marks the fulfilment of one man's dream. A long-time lover of Bordeaux and Burgundy wines, Sir Peter Michael's ambition from the outset was to turn this estate into a benchmark among fine Californian wines.

The wine
Produced since 1988, Peter Michael Winery's "Pavots" Estate Cabernet Sauvignon Blend is a Knights Valley wine. Named after the Californian poppy flower, this wine is made from vineyards planted in 1989 and 1999 on the slopes of Mount St. Helens. Situated at an altitude of over 420 metres, this terroir, with its volcanic soils, produces one of the estate's most emblematic wines.
Vinification and ageing
Aged for 18 months in French oak barrels.

Merlot (21%)
Cabernet Franc (14%)
Petit Verdot (5%).

The tasting
Colour
The colour is a beautiful ruby-garnet hue.
Nose
The nose blends fruity (blackberry, black cherry) and floral (violet, garrigue) aromas with notes of dark chocolate, vanilla and tobacco.
Palate
The round and full mouthfeel seduces with its elegance and silky tannins. Black tea, blackberry pie, caramel, cocoa... so many aromas weave into a persistent finish.
Cellaring
Enjoy from 2023, this Californian red wine can be cellared until 2039 to bring out its full range of aromas.
