Pax Wine Cellars is known for producing world-class single-vineyard Syrah wines on the Northern Coast of California. Over the past few years the estate has become a refrence for New World Syrah. These are wines that are terroir-driven to the core, expressing the typical characteristics of their vineyards of origin. In order to allow the personality of each site to shine through fully, the Pax Wine team has adopted indigenous fermentations and a minimal handling in the winery. The wines are aged in fine French oak and then bottled without any filtration or filtration. The Pax "Sonoma Hillsides" Syrah comes from the Sonoma Hillsides appellation of California's Northern Coast. This wine shows the tremendous potential of California Syrah through a wine that is produced with 100% whole bunch pressing and a sustainable, organic farming.

The Pax "Sonoma Hillsides" Syrah 2018 displays a beautifully intense and dark color in the glass. On the nose this Californian Syrah reveals deep inky black and blue fruit and blackberry liqueur, along with spicy black licorice, hickory smoke, black pepper and dried mountain herbs. On the palate, this wine is incredibly rich and supple, offering layer upon layer of black fruit flavor. A fantastic wine to enjoy with a wide range of meat dishes or roasted autumn vegetables.
