The Clau de Nell Grolleau is produced from only two hectares of vineyards, harvested from low yielding old vines averaging 60-90 years old. Handpicked and hand destemmed, the grapes are matured on their fine lees for 12 months in old Burgundy casks and another 12 months in steel vats. Following biodynamic principles and the lunar calendar, the wine is bottled unfined and unfiltered on a fruit day. The Clau de Nell Grolleau has pure cherry fruit, violets and flowers on the nose. Blackberry, plum and floral notes mingle on the palate with an elegant finish that evolves with every second.
