Description
Characteristics and Tasting Notes of L'Accomplie Extra Brut Savart
Tasting
Color
L'Accomplie Extra Brut displays a pale gold color, occasionally with slightly green highlights, accompanied by a very fine and persistent effervescence that rises in a steady, regular column.
Nose
The nose of L'Accomplie Extra Brut is complex and aromatic, revealing white fruit and citrus notes such as green apple and grapefruit, layered with white flowers. Depending on the stage of evolution, the aromatic palette can also open onto dried apricot, chamomile, dried flowers, and light touches of herbs and white pepper, with each facet remaining clearly defined.
Palate
On the palate, L'Accomplie Extra Brut is juicy and energetic, combining the richness and power of pinot noir with the finesse brought by chardonnay. A bright, almost tangy acidity runs through the wine, giving it a lively, salivating character while keeping it light and precise on the palate. The finish is remarkably long, with persistent notes of fruit, flowers, and a light touch of spice.
Food and wine pairings
L'Accomplie Extra Brut shines alongside refined starters, particularly delicate preparations based on white fish, where its citrus freshness highlights the dish without overpowering it. Its vinous structure also allows it to pair with white meats, especially roasted poultry served with light, creamy sauces. It can equally accompany contemporary vegetable-based dishes featuring fine herbs, as well as mild, pressed-curd cheeses.
Serving and cellaring
L'Accomplie Extra Brut Savart can be served chilled, in line with the usual serving temperature for champagne.
Other characteristics
L'Accomplie Extra Brut falls within the extra brut category, with a dosage level below 6 g/l of residual sugar, placing it in a dry but nuanced style.
A Premier Cru Champagne Shaped by Pinot Noir from the Montagne de Reims
The Estate
Champagne Savart is an independent grower-producer house founded in 2001 by Frédéric Savart, when he left the cooperative system to vinify and market wines under the Savart name. Located in Écueil, a premier cru village in the Montagne de Reims, the estate farms roughly four hectares, mostly planted with pinot noir alongside chardonnay. Guided by Frédéric Savart, the house is recognized for its terroir-driven, author-style champagnes, built on old vines, barrel aging, and a non-interventionist winemaking philosophy.
The Vineyard
The grapes used for this Premier Cru champagne come from old vines planted on the premier cru sites of Écueil and Villers-aux-Noeuds, in the Montagne de Reims. These plots rest on clay-limestone soils over a chalk subsoil, offering good drainage and water retention that help preserve freshness in the grapes. The vineyard includes old massal selection pinot noir vines, originally planted by Frédéric Savart's grandfather, which contribute depth and aromatic intensity to the fruit.
Blend
L'Accomplie Extra Brut is a multi-vintage cuvée, built on a base of a recent harvest completed with reserve wines from the two or three preceding vintages. This approach allows the wine to smooth out annual climatic variations while maintaining a consistent expression of its Écueil and Villers-aux-Noeuds terroirs.
Winemaking and aging
L'Accomplie Extra Brut is made exclusively from first-press juice, ensuring a higher concentration of aromatic compounds and noble acids. Fermentation and aging are split between neutral oak barrels and stainless steel tanks, using indigenous yeasts in keeping with the house's non-interventionist approach. Malolactic fermentation is generally sought but can remain partial depending on the vintage, allowing the wines to retain a precise acidic backbone while gaining roundness. The base wines are blended before the second fermentation in bottle, followed by aging on lees prior to disgorgement.
Grape Varieties
L'Accomplie Extra Brut is predominantly made from pinot noir, complemented by chardonnay.
