The estate

Nicknamed "Boll" by the people of Champagne or "Bolly" by the English, the timeless and legendary Champagne Bollinger house belongs to the small circle of the greatest Champagne houses. The style of Bollinger champagne is defined through the exemplary precision brought to every stage of production. Respect for tradition, hand riddling of the bottles, cork sealing for magnum reserve bottles, the last resident cooper in the region—this taste for excellence embodies the entire culture of Bollinger champagne since its creation in 1829 in Aÿ. More than an art, it is a heritage.

The vineyard

Bollinger owes its distinctiveness to its 174 hectares spread across seven main vineyards in Champagne, 85% of which are Grand Cru and Premier Cru sites, allowing the house to be one of the rare ones to produce its own grapes for its blends. The house's signature grape variety, pinot noir, accounts for 60% of the vineyard's plantings.

The wine

La Côte aux Enfants Blanc de Noirs is a Grand Cru from Aÿ, made from the single eponymous plot. This 4-hectare single-block plot was assembled (through successive acquisitions between 1926 and 1934) by Jacques Bollinger. The Bollinger house pays tribute to his visionary spirit by unveiling this first single-vineyard Brut cuvée.

Winemaking and aging

This 2012 vintage champagne benefited from a cellar aging period under cork more than twice as long as required by the appellation's rules. Its dosage is 8 grams per liter.
