The estate
Nicknamed “Boll” by the Champenois or “Bolly” by the English, the timeless and legendary House of Champagne Bollinger belongs to the small circle of the greatest Champagne houses. The style of Bollinger champagne is defined by the exemplary precision applied to every stage of production. Respect for tradition, hand riddling of bottles, cork sealing of reserve magnums, and having the region’s last resident cooper—this pursuit of excellence embodies the entire culture of Bollinger champagne since its founding in 1829 in Aÿ. More than an art, it is a heritage.
The vineyard
Bollinger owes its distinctiveness to its 174 hectares spread across seven great vineyards in Champagne, 85% of which are Grand and Premier Cru sites, allowing the house to be one of the few able to grow its own grapes for its blends. The house’s signature grape variety, Pinot Noir, accounts for 60% of the vineyard’s plantings.
The wine
A new chapter in Bollinger’s exploration of the expression and origins of Pinot Noir, the PN AYC18 Blanc de Noirs Brut cuvée from Bollinger is crafted from renowned vineyards located in the villages of Aÿ, Tauxières, and Verzenay. This Bollinger Blanc de Noirs champagne harmoniously combines a base vintage (2018) with the oldest vintage used, 2009. Its dosage is 6 grams per liter.
Winemaking and aging
The aging period within the house’s cellars is more than twice the duration required by the appellation’s specifications.

As the tasting unfolds, luscious aromas of honey, fruit paste, quince, and candied citrus mingle with notes of almond paste and blood orange, along with refreshing spicy (sweet spice) and minty notes.

Perfectly combining finesse and aromatic expression, the palate lingers into a finish that seduces with its refreshing candied citrus flavors.

A scallop carpaccio with citrus, duck breast with orange sauce, or a quince almond tart make elegant pairings with this Brut champagne.
