The Elisabeth Salmon Billecart-Salmon Cuvée was first created in 1988 in honor of Elisabeth Salmon who was the co-founder of the Champagne House. The blend is Pinot Noir and Chardonnay.
At tasting, Elisabeth Salmon Billecart-Salmon Cuvée 2006 offers a bright, bright pink salmon color. The bubbles are fine and graceful. The nose has aromas of red fruit, citrus peel, stone fruit, fig, roasted vine peach, almond macaroon, and light fragrances of wild strawberry and rose. The palate is powerful, delicate and harmonious. It offers yellow fruit, sweet spice, oak and exotic notes. A voluminous champagne that is ample and racy on the palate.
