The art of the blend in an exceptional champagne by Billecart-Salmon

The estate

Since its creation in 1818 by married couple, Elisabeth Salmon and Nicolas-Francois Billecart, the Billecart-Salmon Champagne House has remained independent, having preserved all of its know-how and demand for high-quality cuvees for 7 generations.

The vineyard

The Billecart-Salmon vineyard covers 100 hectares from the Cote des Blancs to the Reims mountain. The vines are cultivated and cared for in a traditional manner so that the wine resembles real fruit and to reflect the quality of its terroir.

The wine

Derived from the most beautiful Premier and Grand Crus from the Reims Mountain and the Cote des Blancs, the Brut sous Bois cuvee by the Billecart-Salmon Champagne House has totally mastered the art of the blend, combining ancestral know-how and the spirit of original champagnes. A unique cuvee, it is entirely vinified in wood (‘sous-bois’).

Winemaking and aging

30 to 35% reserve wines. Aging on lees for 6 to 7 years. 7g/l dosage.


The Brut sous Bois cuvee by the Billecart-Salmon Champagne House is made up of three famous grape varieties from Champagne: Chardonnay, Pinot Noir and Pinot Meunier.



The wine is a crystal-clear, golden yellow color with bright highlights. The effervescence is delicate and persistent.


On the nose, the Brut sous Bois champagne by Billecart-Salmon harmoniously mixes fragrances of dried fruits, fresh citrus and white fruits, jazzed up by subtly buttery notes. An aromatic finesse expressing all of the complexity of a ripening process and vinification in oak barrels.


On the palate, this champagne reveals a refreshing texture amplified by a creamy sensation and a beautiful liveliness. There is a burst of flavors, with toasted notes of milk rolls and toffee leading to a sophisticated development.

Aromas of almond paste, green orchard fruit, citrus oil and pastry cream introduce the latest example of Billecart's NV Brut Sous Bois, a bottling that's based on the 2009 vintage. The oak influence is much less pronounced than was the case with some of the early renditions of this cuvée, and it's really going from strength to strength, revealing a medium to full-bodied palate that's broad-shoulder and structured, with lively underpinning acids.
