A Zesty and Refreshing Sauvignon Blanc from New Zealand
Otto's Constant Dream (OCD for short) is the brainchild of Melissa Saunders, whose obsessive passionate about winemaking is alluded to in the wine's name, and her business partner Chris Antista, who first designed the emblematic label of the cuvee. It was this wine that later launched Communal Brands. Otto's Constant Dream is produced by Jane Hunter, one of the pioneering winemakers in the Marlborough region of New Zealand. This is a wine made of 100% Sauvignon Blanc from vines planted in the 1980's and 1990's in free-draining alluvial soils with a high concentration of gravel and clay. The vines are estate grown and sustainably farmed. In the vineyards of Rapaura, the free-draining soils make for wines with a certain finesse, while the higher clay content in the soils of Omaka result in wines with a bit more power on the palate. The wines are fermented mostly in stainless steel, with a small percentage fermented in French oak, at 15 degrees Celcius for a period of 3 weeks. The wine enjoys contact with its lees for approximately 6 weeks before it is lightly fined, filtered and bottled.The Otto's Constant Dream 2017 shows off a pale yellow-green color in the glass. On the nose, this wine is intensely aromatic, exuding youthful, zesty and ripe fragrances of flowers, lime, green apple and passionfruit. On the palate, this New Zealand Sauvignon Blanc has a medium body with a refreshing natural acidity and a long finish, marked by notes of grapefruit, lemon and an elegant mineral quality. This wine is a fabulous food pairing to seared tuna or a creamy risotto, seasoned with lemon zest.
