Description
Marc Hébrart Spécial Club Premier Cru Brut 2021: Tasting Notes and Serving Recommendations
Tasting
Color
This champagne shows a bright, luminous yellow robe, animated by a steady, fine stream of bubbles.
Nose
The nose opens on notes of pastry and white flowers, followed by stone fruit and ripe apple, giving the wine an inviting, generous aromatic profile.
Palate
The palate is full and structured, carried by a generous, creamy mousse. Citrus zest, white peach, and raspberry mingle with toasted brioche and hazelnut, all wrapped in a pronounced chalky character. The finish is long, mineral, and remarkably fresh.
Food and wine pairings
This champagne is well suited to the aperitif, and it also pairs beautifully with fish and seafood, where its freshness and chalky minerality can echo the delicacy of the dish.
Serving and cellaring
The Spécial Club Premier Cru Brut 2021 is best enjoyed at a serving temperature of 8 to 10°C (46 to 50°F), whether poured as an aperitif or alongside fish and seafood dishes.
Other characteristics
This cuvée carries a moderate dosage of about 5 grams per liter, placing it firmly in the brut category, and it was disgorged in January 2025 after an extended aging period on lees.
A Pinot Noir-Driven Champagne Premier Cru from Marc Hébrart's Marne Valley Estate
The Estate
Founded in 1963 by Marc Hébrart in Mareuil-sur-Aÿ, this Champagne estate has been run since 1997 by his son, Jean-Paul Hébrart, who continues to shape its identity today. As a grower-producer, the family controls every stage from vine to bottle across roughly 14 to 16 hectares of Premier and Grand Cru plots in the Marne Valley and the Côte des Blancs. A member of the Club Trésors de Champagne since the mid-1980s, Marc Hébrart has built a reputation for precise, terroir-driven champagnes centered on pinot noir.
The Vineyard
This Champagne Premier Cru draws on old vines, some over fifty years of age, planted on the estate's finest Premier Cru parcels in Mareuil-sur-Aÿ, complemented by Grand Cru plots in Oiry and Chouilly on the chalky soils of the Côte des Blancs. These mature vines bring concentration and depth, while the chalk-rich ground lends freshness and minerality to the fruit.
Winemaking and aging
As a Spécial Club cuvée, the Marc Hébrart Spécial Club Premier Cru Brut 2021 was selected from the estate's best plots and validated through blind tastings, both as a still wine and after the second fermentation, before being bottled in the distinctive Club Trésors flask. It then rested on lees for an extended period before disgorgement in January 2025, allowing the wine to develop its layered, textured character.
Grape Varieties
This cuvée is built around pinot noir, complemented by chardonnay, sourced from the estate's old vines in Premier and Grand Cru sites.
