The vintage
After a mild winter, the year 2015 was marked by many contrasts: a freezing spring was followed by a prolonged heatwave from mid-May to mid-August, with exceptional sunshine and periods of drought. The saving rains of late August allowed for optimal maturation, revealing berries of remarkable generosity and balance.
Vinification and aging
The vinification process at Dom Pérignon strictly respects the principles of the Champagne method, with an absolute commitment to the faithful representation of the vintage. The prolonged maturation in the cellar, a resting time that far exceeds the standards of the appellation, allows the champagne to develop its complexity and aromatic depth.
