A vintage Blanc de Blancs Champagne that seduces with richness and balance
The estate
The House of Champagne Ayala was founded in 1860 by Edmond de Ayala and his wife. Passed down from generation to generation, the passion of the Ayala family lies in crafting champagnes of great elegance, appreciated far beyond French borders, notably across the Channel, where Ayala was the official supplier to the British Crown. In 2005, the House of Champagne Ayala was acquired by the family-owned Bollinger company.
The wine
Produced in limited quantities exclusively in exceptional vintage years, this Blanc de Blancs from Ayala embodies the elegance and purest expression of the great terroirs of the Côte des Blancs in Champagne. This cuvée is crafted from grapes grown in vineyards located in Oger, Chouilly, Cramant, Cuis and Grauves.
Winemaking and aging
This Blanc de Blancs Champagne from Ayala is aged in the cellar for 6 years on the lees. Its dosage is 5 g/liter.

Appearance
Bright with a beautiful pale gold hue, the color is underscored by a remarkably delicate effervescence.
Nose
Complex, the nose blends fragrances of ripe yellow lemon, citron and jasmine with subtle honeyed (acacia honey) and peppery (Timut pepper) notes
Palate
The attack seduces with its precision and balance. Full-bodied and generous, the palate reveals aromas of passion fruit, citrus and spice, as well as mirabelle plum tart. Persistent, the finish exhales a smooth, chalky minerality.
Food and wine pairing
Ideal as an aperitif, Ayala's 2016 Blanc de Blancs pairs perfectly with turbot in beurre blanc, turkey with endives and lime, Crottin de Chavignol cheese or an exotic fruit Pavlova.
