Le Figaro Vin

The 2005 is compact, dense and tight-knit. The oak shows through a little in this closed phase, but only slightly. It is tasting a little less well for the moment, but it has great potential. Ripeness was high, as in 2009, but it still needs a bit more time to express itself.

Nose
The aromatic bouquet expresses a beautiful fruity maturity, enriched by indulgent fragrances of honey and delicate notes of toasted hazelnuts.

Palate
On the palate, this cuvée proves to be at once generous, refined and remarkably complex. It delivers a finish of outstanding length, supported by a very clear aromatic persistence. This two-decade-old wine is now regarded by connoisseurs as a true marvel.

Serving and cellaring
To fully appreciate the complexity of this Beaune 1er Cru "Clos des Mouches" 2005, it is recommended to serve it at a temperature of 14°C. This cuvée has reached its peak and currently offers optimal drinking, while still retaining an additional cellaring potential of approximately 2 to 5 years.

The estate
The Maison Joseph Drouhin, officially founded in 1956, is an emblematic institution of Burgundy. Today, the company is run by Frédéric Drouhin, supported by his sister Véronique and his brother Philippe. The family oversees a 100-hectare vineyard. Renowned for its respect for tradition and its sustainable approach, the estate has also distinguished itself through its pioneering spirit by expanding as far as Oregon, while preserving its deeply family-oriented identity.

The vineyard
The plot from which this cuvée is sourced lies at the extreme south of the Beaune appellation, right on the border with Pommard. Resting mid-slope on a gentle east and south-east facing incline, this 14-hectare terroir is the largest plot of this cru, planted in equal parts with red and white varieties. The soil consists of clay and limestone, with a stony upper layer and a heart of marl-limestone rock, ideal characteristics for crafting wines of great finesse. Historically, this sunny location was home to beehives, as bees were once nicknamed "honey flies". Acquired in the 1920s by Maurice Drouhin, this Climat is farmed with limited yields and has been tended according to the principles of organic farming since the late 1980s, and biodynamic farming since the 1990s.

Vinification and ageing
The creation of the Beaune 1er Cru "Clos des Mouches" 2005 begins with a manual harvest carried out in slatted crates, followed by rigorous sorting whenever needed. The whole clusters then undergo slow pressing using a pneumatic press. Fermentation and ageing take place in oak barrels, 20 to 25% of which are new, made from wood sourced from high-forest French woodlands. This maturation period lasts between 16 and 18 months.
