Description
Characteristics and Tasting Notes of Piper-Heidsieck Cuvée 1785 Brut NV
Tasting
Color
The hue is a pale golden yellow, bright and luminous, animated by fine, persistent bubbles that reveal a well-integrated effervescence.
Nose
The nose opens on fresh citrus notes of lemon and grapefruit, joined by green apple and pear, alongside subtle white floral touches. These fruity impressions are layered with brioche, toasted bread and lightly roasted almond, giving the wine a complex and inviting bouquet.
Palate
The palate reveals a fine, creamy mousse with a juicy, generous texture. The attack is marked by white fruit and citrus, evolving toward ripe pear, sweet apple and golden grape, enriched by notes of fresh almond, biscuit and toasted bread. A lively acidity brings structure and lift, leading to a clean, crisp finish dominated by lemon and grapefruit, with a lingering, refreshing citrus character.
Food and wine pairings
This Champagne pairs naturally with beef or salmon tartare enhanced with toasted sesame and fresh herbs, as well as with fried seafood dishes such as fish and chips or tiger shrimp, where its acidity cuts through richness. It also complements fine cured meats like pata negra, and shows versatility alongside shellfish, crab or lobster. On the sweeter side, it can accompany lightly sweet desserts such as cheesecake or white fruit pastries.
Other characteristics
The dosage of this brut-style Champagne generally falls within a range of 9 to 11.9 g/L, resulting in a dry yet harmonious profile that balances freshness with a touch of roundness.
A Non-Vintage Champagne Shaped by Pinot Noir and Over 100 Crus
The Estate
Piper-Heidsieck is a Champagne house founded in 1785 in Reims by Florens-Louis Heidsieck. Today it relies on a vineyard of more than 65 hectares, complemented by around 240 partner growers across over 110 crus. Since 2011, the house has belonged to the EPI group, led by Christopher Descours, with Stéphane Decaux overseeing operations and Emilien Boutillat serving as cellar master. Piper-Heidsieck holds B Corp certification, reflecting its commitment to sustainable and responsible winemaking.
The Vineyard
The grapes used for this Champagne are sourced from a wide network spanning more than 110 crus, combining the house's own vineyard holdings of over 65 hectares with fruit supplied by approximately 240 partner growers. The sourcing draws notably on the Montagne de Reims, known for its quality pinot noir, and the Côte des Bar, which contributes additional diversity of style and texture to the blend.
Blend
As a non-vintage Champagne, Cuvée 1785 Brut NV is composed through the assemblage of wines from multiple harvests, incorporating reserve wines to ensure a consistent style year after year. The blend draws on more than 100 different crus, allowing the house to capture a broad representation of Champagne's terroirs within a single cuvée while smoothing out the variations between growing seasons.
Winemaking and aging
For Cuvée 1785 Brut NV, alcoholic fermentation takes place in September and October, followed by malolactic fermentation between October and December. The blending of base wines is carried out between February and April. The wine is then aged on its lees in the cellar for a minimum of 24 months before disgorgement, followed by an additional six months of rest in bottle to refine the mousse and integrate the dosage.
Grape Varieties
This Champagne is composed of pinot noir, pinot meunier and chardonnay, with pinot noir forming the backbone of the blend at roughly half of the assemblage, complemented by pinot meunier and chardonnay in varying proportions that complete the remainder.
