Nose
The bouquet opens with delicate notes of red rose petals and Morello cherries, accompanied by hints of pink grapefruit and Timut pepper. As it aerates, gentle spices gradually emerge, bringing a remarkable freshness.

Palate
The attack is particularly mouthwatering, driven by a precise and chalky structure. The palate displays a beautiful salinity combined with a delicate fruitiness marked by umami notes. Flavors of cherry flesh, kumquat, and quince develop harmoniously, leading to a chalky, dry, and powdery finish, elevated by a slight bitterness that underlines the champagne's persistence.

Food and wine pairings

This Blanc de Noirs Grand Cru pairs perfectly with grilled shrimp, pata negra, and poultry. It also enhances game birds and lightly smoked fish such as sea bass or red mullet. The estate

Founded in 1981 by Bruno Paillard at the age of 27, this independent Champagne house now cultivates 31 hectares of vineyards, about half of which are Grand Cru, spread across Oger, Le Mesnil-sur-Oger, Cumières, and Verzenay. Bruno Paillard, still the sole owner, continues a winemaking lineage dating back to 1704. A pioneer of transparency, he was the first to indicate disgorgement dates as early as 1983. The House stands out for its minimal dosages (a maximum of 6g/L), exclusive use of the first press juice, and a rigorous terroir-driven approach.

The vineyard

This Blanc de Noirs Grand Cru draws its character from four exceptional Champagne terroirs of the Montagne de Reims: Verzenay, Mailly, Verzy, and Bouzy, all classified as Grand Cru. These vineyards benefit mainly from northern exposures and rest on chalky soils that impart the champagne with its characteristic minerality and precise structure.

Vinification and aging

Vinification of this Blanc de Noirs is mainly carried out in stainless steel vats, complemented by 15 to 20% fermentation in oak barrels depending on the vintage. Aging on lees lasts for 3 years, followed by an additional minimum 6-month rest after disgorgement, allowing the champagne to fully develop its aromatic complexity and fine bubbles. The dosage for this Extra-Brut is 3g/L.
