The elegance and creaminess of a Grand Cru Classé from Saint-Émilion

The estate

Vines have been cultivated on the slopes of what is today Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, 1er Grand Cru Classé « A », possesses one of the finest terroirs in Saint-Émilion. Château Pavie is renowned for the structure and elegance of its wines, resulting from yields kept lower than the appellation’s average in order to reveal all the nuances of this exceptional terroir.

The vineyard

Château Pavie is a Saint-Émilion wine produced from a single 42-hectare vineyard. Situated on the southeast side of the Saint-Émilion hill, the vineyard extends across three levels up the slope, with vines averaging 36 years of age. The "plateau" (85 meters above sea level) is composed of clay-limestone soil over astéries limestone and the "mid-slope" (55 meters above sea level) consists of fine-textured brown clay-limestone soil. The "foot of the slope" comprises sandy / sandy-clay soils and sandy-gravelly soils.

Particular attention is paid to the vineyard, part of which has undergone a replanting plan comprising the raising of the trellising to increase leaf surface area, specific pruning based on vine age, cluster thinning and leaf stripping.

Winemaking and aging

Hand-harvested grapes with sorting. Vinification in temperature-controlled wooden vats. Malolactic fermentation takes place in barrels, as does the aging (65% new barrels, 35% one-wine barrels).

Blend

Château Pavie 2024 is a blend of Merlot (51%), Cabernet Franc (32%) and Cabernet Sauvignon (17%).
