Description
A great vintage for a fine and elegant Saint-Émilion
The estate
The origins of the estate go back a very long way. Vines have been grown on the slopes of what is now Château Pavie since the 4th century.
Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1st Grand Cru Classé "A", boasts one of the finest terroirs in Saint-Émilion.
Château Pavie is renowned for the structure and elegance of its wines.
Arômes de Pavie became the label of Château Pavie's second wine in 2005, succeeding Château Tour Simard.
The vineyard
Arômes de Pavie is produced mainly from vines under 10 years old
and from lots that do not go into the first wine.
Located southeast of the Saint-Émilion hillside, the 29-hectare vineyard, whose young vines are used in the blend of Arômes de Pavie, spans three levels as it climbs the slope. The "plateau" (85 meters in altitude) has clay-limestone soil, while the "mid-slope" (55 meters in altitude) has fine-textured brown clay-limestone soil. The "foot of the slope", meanwhile, is made up of sandy and sandy-clay soils with an iron pan between 60 and 80 cm, as well as sandy-gravelly soils.
Special care is given to the vineyard, with pruning tailored to the age of the vines, green harvesting, and leaf thinning.
Winemaking and aging
The process is tailored to the exact potential of the harvest. Twenty temperature-controlled wooden vats receive the grapes for a three-week maceration period. Malolactic fermentation takes place in barrels. The wine is aged in barrels for 18 to 24 months, with 50% new barrels and 50% one-wine barrels.
Blend
Arômes de Pavie 2019 is a blend of Merlot (65%), Cabernet Franc (18%), and Cabernet Sauvignon (17%).
