A rich and balanced Grand Cru Classé from Saint-Émilion
The estate
The origin of the estate is very ancient. The vines have been cultivated on the slopes of what is now the Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, a 1st Grand Cru Classé "A", has one of the most beautiful terroirs in Saint-Émilion. Château Pavie is recognised for the structure and elegance of its wines, resulting from a harvest contained in yields lower than the average of the appellation in order to reveal all the nuances of this exceptional terroir.
The vineyard
Château Pavie 2023 is a Saint-Émilion wine from a single 42-hectare vineyard. Located southeast of the Saint-Émilion hill, the vineyard stretches over three levels up the slope, with vines averaging 34 years old. The "plateau" (85 metres above sea level) consists of a clay-limestone soil above asteriated limestone and the "mid-slope" (55 metres above sea level) consists of a fine-textured brown clay-limestone soil. The "foot of the slope" is composed of sandy / sandy-clay soils and sandy-gravelly soils.
Particular attention is paid to the vineyard, part of which has been subject to a replanting plan including raising the trellising to increase the leaf area, specific pruning according to the age of the vines, thinning and leaf removal.
Vinification and ageing
Manual harvest with sorting. Vinification in thermo-regulated wooden vats. The malolactic fermentation is carried out in barrels, as is the ageing (72% new barrels, 28% of a wine).
Blend
Château Pavie 2023 is a blend of Merlot (51%), Cabernet Franc (32%) and Cabernet Sauvignon (17%).
