Tasting Notes
Appearance
The colour takes on a lovely pale yellow hue, illuminated by delicate golden highlights.
Nose
Displaying great elegance, the nose reveals a beautiful minerality harmoniously blended with delicate oak notes. It exudes aromas of ripe citrus fruits, lemon and white peach, enriched by floral notes of acacia and linden blossom, all underscored by a subtle touch of stony reduction.
Palate
The palate stands out for its freshness and elegance, carried by a lovely mineral tension. It reveals delicious grapefruit notes before unfolding into a lingering, pleasantly buttery finish.
Food and Wine Pairing
This white wine pairs perfectly with firm-fleshed fish prepared in sauce, such as turbot or sea bass with beurre blanc. It also enhances noble shellfish such as lobster and langoustine, as well as white meats served with a creamy mushroom sauce. Finally, it will beautifully complement soft-rind cheeses or creamy goat cheeses.
Serving and Ageing
For an optimal tasting experience, it is recommended to serve the Meursault Village "Les Clous" Domaine 2023 at a temperature between 12 and 14°C. This wine can be enjoyed now or cellared and drunk until around 2033.

The Estate
Founded in 2023, Vignoble des Cabottes is a major new venture in Burgundy, born from the reorganisation of the Bouchard Père & Fils estate. This roughly 35-hectare domaine, located in the Côte de Beaune, now belongs to the Artémis Domaines group, in association with the Henriot-Larouzière family. Under the direction of Frédéric Engerer, this prestigious estate is dedicated to safeguarding iconic terroirs. The vineyard, farmed organically with a transition towards biodynamics, combines respect for Burgundian tradition with a strong commitment to environmental standards.
The Vineyard
This wine comes from the "Les Clous" lieu-dit, located on the higher slopes of the Meursault appellation. Acquired in 1996, this 2.64-hectare plot sits at an altitude of 325 metres and enjoys an ideal east-facing exposure. The vines flourish on a plateau terroir made up of calcareous marl resting on a hard rocky base, giving the wine its characteristic energy and precision.
The Vintage
2023 was marked by warm weather conditions. Despite these high temperatures, the terroir's elevated position helped preserve a lovely freshness at the heart of the berries.
Winemaking and Ageing
The grapes for the Meursault Village "Les Clous" Domaine 2023 were hand-harvested on 8 September 2023. In the cellar, the wine undergoes a careful ageing process lasting 20 months, including 30% new oak barrels, to preserve the brightness of the fruit and its mineral tension.
