Appearance
This wine reveals a robe of medium depth.

Nose
Displaying great finesse, the bouquet is remarkably elegant and typical of Pinot Noir. It exudes seductive aromas of Burlat cherries and red berries, delicately underlined by floral notes and a touch of sweet spices.

Palate
The attack reveals ripe, perfectly integrated substance, supported by tannins of fine quality and a beautifully refined structure. The palate stands out for its pronounced minerality and a saline edge, before extending into an indulgent finish with aromas of jammy black fruits, raisins and sweet spices.

Food and wine pairings
This cuvée will pair wonderfully with traditional dishes such as blanquette de veau or pot-au-feu. It will also enhance white meats or fine poultry with delicate flesh.

Serving and cellaring
This Savigny-Les-Beaune 1er cru "Les Lavières" 2023 shows excellent ageing potential. It can be cellared and enjoyed until 2035.

The elegance of a great Burgundy terroir by Vignoble des Cabottes

The estate
Officially established in 2025, the Vignoble des Cabottes brand was born from the restructuring of the prestigious plots of the former Bouchard Père & Fils estate. Owned by Artémis Domaines, led by the Pinault family, this entity extends over 35 hectares in the heart of Burgundy, on the renowned Côte de Beaune. Taking its name from the traditional stone shelters, the estate is exclusively devoted to showcasing Premiers and Grands Crus. Under the direction of Frédéric Engerer, it embodies a new vision of viticultural excellence.

The vineyard
Located a few kilometres north of Beaune, the 3.94-hectare plot giving rise to this Savigny-Les-Beaune 1er cru "Les Lavières" enjoys a full southern exposure at 260 metres above sea level. Acquired in 1909, it rests on a complex clay-limestone soil, combining sandstone, sand, marl and ferruginous oolites. This exceptional terroir takes its name from the "laves", the thin flat limestone slabs once used for local roofing. To preserve these vines in the face of climatic changes, the estate is experimenting with innovative practices such as the use of green manures, biochar and mycorrhizae.

The vintage
The 2023 year ranks among the warmest ever recorded in the region, even surpassing the temperatures of the previous vintage. Despite a spring and summer marked by intense heat and severe drought, the vine demonstrated remarkable resilience. These singular weather conditions made it possible to obtain a generous harvest, delivering grapes of exceptional quality.

Winemaking and ageing
The harvest took place on 8 and 9 September. After an extremely rigorous berry sorting, the winemaking, carried out at Château de Puligny-Montrachet, incorporated 30% whole clusters. The wine then benefited from a meticulous 20-month ageing period, including a proportion of 35% new barrels, in order to enhance the balance between purity and structure.
