Description
Tasting Notes and Serving Recommendations for the Gevrey-Chambertin 1er Cru "Aux Combottes" 2020 from Hubert Lignier
Tasting
Nose
This Gevrey-Chambertin 1er Cru "Aux Combottes" 2020 opens with a floral bouquet intertwined with notes of griotte cherry, complemented by bright red fruit.
Palate
The palate reveals a sapid, precise texture, with suave fruit framed by ultra-fine, precise, and lively tannins.
Serving and cellaring
According to the estate, wines from the Aux Combottes climat are concentrated and graceful, deep and complex, and reveal themselves best with a few years of patience. This Gevrey-Chambertin 1er Cru "Aux Combottes" 2020 is therefore well suited to cellaring, allowing its texture and aromas to deepen further over time.
A Gevrey-Chambertin 1er Cru from Burgundy's Côte de Nuits, Crafted by Domaine Hubert Lignier
The Estate
Domaine Hubert Lignier was established in 1959, when Hubert Lignier took over the family vineyards in Morey-Saint-Denis, in Burgundy's Côte de Nuits. Today, the estate is run by Hubert alongside his son Laurent Lignier, who oversees winemaking and vineyard management. Spanning around 11 hectares, mostly in the Côte de Nuits with a few parcels in the Côte de Beaune, the property has been certified organic since 2019. Hubert Lignier is recognized for precise, terroir-driven pinot noirs, crafted largely from old vines.
The Vineyard
The Gevrey-Chambertin 1er Cru Aux Combottes climat covers about 3 hectares, bordered by three grand crus: Latricières-Chambertin to the north, Charmes-Chambertin to the east, and Clos de la Roche to the south and west, right at the border between Gevrey-Chambertin and Morey-Saint-Denis. This climat is dedicated exclusively to red wine from pinot noir. Within it, Domaine Hubert Lignier owns a small 15-are plot planted in 1957, now classified among the estate's old vines. The gentle slope is covered with soils of sand, clay, and loam, offering good drainage while retaining enough moisture to sustain the vines through the growing season.
The Vintage
2020 marked the second vintage produced under full organic certification at the estate, following conversion completed in 2019. The growing season led to an early harvest, which began on August 27, reflecting advanced ripeness across the vineyards.
Winemaking and aging
This Gevrey-Chambertin 1er Cru "Aux Combottes" 2020 is made from hand-harvested, carefully sorted grapes, following a cold pre-fermentation maceration and fermentation with native yeasts. As is customary at the estate, part of the crop is vinified as whole clusters, with gentle extraction aimed at preserving the purity of the fruit. The wine is then aged in oak barrels for close to two years, roughly half of which are new, without any racking, before being bottled by gravity without fining or filtration.
Grape Varieties
100% pinot noir.
