The Estate
Founded in 1830 by Guillaume Roulot, Domaine Roulot has established itself over the generations as an essential name in Meursault, in the Côte de Beaune, Burgundy. The estate's rise owes much to Guy Roulot in the 1950s-1960s, before his son Jean-Marc Roulot, trained in theater, took over in 1989. Today, Jean-Marc Roulot leads the property alongside his sister Michèle, cultivating approximately eleven hectares of vines farmed organically and then biodynamically, perpetuating a style of precise, taut, and mineral wines, now recognized among the essential references of white Burgundies.

The Vineyard
The vines of Meursault Village "Les Narvaux" are located high on the Meursault slope, just above the Premier Cru Les Genevrières, at an altitude between 320 and 350 meters. This climat benefits from shallow, particularly stony limestone soils, which give the wines their characteristic tension and recognizable mineral character. The vines, propagated through mass selection, were planted in the 1950s-1960s and are farmed according to organic farming principles, certified since 1998, then biodynamic since the early 2000s.

Vinification and Aging

Fermentation takes place with indigenous yeasts, in oak barrels and stainless steel tanks, with a proportion of new oak between 15 and 20%. Light lees stirring (bâtonnage) is practiced every three to four weeks until the end of malolactic fermentation, which occurs naturally. Aging on the lees lasts twelve to fifteen months, following a resolutely minimalist winemaking philosophy.
