The elegance and vivacity of a Premier Grand Cru Classé A from Saint-Émilion
The estate
The estate's winegrowing history dates back to the fourth century, under the impetus of the Romans, making it one of the oldest terroirs in Saint-Émilion, in the Bordeaux region. Acquired in 1998 by Gérard Perse, who carried out a monumental restructuring of the cellars and vineyards, the estate was elevated to the rank of Premier Grand Cru Classé A in 2012. Following the passing of this visionary owner in July 2025, the management of the illustrious Château Pavie is now in the hands of Henrique and Angélique Da Costa. They are perpetuating a philosophy combining excellence, respect for the environment and high-end hospitality.
The vineyard
This exceptional Saint-Émilion terroir stands out for its unique 42-hectare block forming a natural amphitheatre facing south. The vines, with an average age of 37 years, thrive on a mosaic of soils: a limestone plateau at the top, clay-limestone soils on the mid-slope and sandy gravel at the foot of the slopes. The estate favours sustainable viticulture, with a large part of the vineyard already farmed according to organic principles, aiming for full certification.
Winemaking and aging
Precision is at the heart of this wine's creation. After rigorous double sorting, the berries from each plot are vinified separately in temperature-controlled wooden vats. Malolactic fermentation takes place in barrels. Finally, the wine is aged in French oak barrels, 65% of which are new and 35% one-wine. Alcohol content: 14.34% vol.
