The estate
The Bollinger Champagne House, affectionately nicknamed “Boll” in Champagne and “Bolly” in England, has embodied excellence since its founding in 1829 in Aÿ. This historic House, renowned for its meticulous respect for tradition and its relentless pursuit of quality, remains true to its heritage. With practices such as manual riddling of bottles and the use of cork stoppers for reserve magnums, Bollinger perpetuates a unique artisanal savoir-faire.
The vineyard
This House oversees 174 hectares of vineyards, mostly classified as Grand and Premier Crus in Champagne.
Bollinger Special Cuvée: a Champagne of character
Bollinger’s Special Cuvée, inspired by a suggestion from Georges Bollinger’s British agent in 1911, quickly established itself as an exceptional Champagne. Its name, chosen for its subtlety and elegance, reflects the unique character and complexity of this wine. Composed predominantly of Pinot Noir, complemented by Chardonnay and Pinot Meunier, Special Cuvée is the result of meticulous work and masterful blending.
Winemaking and aging
The winemaking of Bollinger Special Cuvée is a precise alchemy steeped in tradition. The exclusive use of the cuvée (first pressing) and a moderate dosage between 7 and 8 g/liter allow the purity and finesse of the Champagne to shine. Extended maturation in the cellar underscores Bollinger’s commitment to excellence, revealing a Brut Champagne of remarkable structure and complexity.
Its cellar aging, twice as long as the appellation standards, and the use of reserve wines kept for up to 15 years in magnums, give this Champagne its depth and aromatic richness.
