The estate
Founded in Beaune in 1731, Bouchard Père & Fils is one of the oldest and most emblematic houses in Burgundy. With nearly three centuries of history behind it, it is the result of the passionate work of nine successive generations.
Today the estate relies on a vast 130-hectare vineyard, including numerous parcels classified as Premier Crus and Grand Crus. This exceptional heritage attests to a deep commitment to excellence and Burgundian tradition.
The vineyard
The Premier Cru "Les Cailles" comes from a 1.08-hectare plot located south of Nuits-Saint-Georges. Facing east/southeast, this exceptional terroir rests on limestone soils that favor the production of wines of great finesse and beautiful depth.
Winemaking and aging
The harvest is carried out by hand, followed by a rigorous sorting of the berries. Destemming is partial or total depending on the specific characteristics of the vintage. Fermentation takes place in small containers, with gentle pressing. The maceration, lasting 12 to 15 days, is followed by aging in French oak barrels (60 to 85% new) for a period of 10 to 18 months in the historic cellars of the Bastions of the former Château de Beaune.
