Description
Tasting Notes and Characteristics of the Gevrey-Chambertin Village "Vieilles Vignes" 2019 from Domaine Sérafin Père & Fils
Tasting
Color
The wine displays a ruby red color with garnet highlights, typical of a Pinot Noir from the Côte de Nuits raised in new oak, with a color intensity that reflects the concentration brought by the old vines.
Nose
The nose opens on subtle spicy, woody notes, a mark of the new oak aging, layered with notable aromatic depth. With aeration, floral nuances gradually emerge, adding further complexity to the bouquet.
Palate
On the palate, the wine reveals a solid structure built on ripe, well-integrated tannins. Its energetic, dynamic character carries the wine forward, while the oak aging enhances the sense of depth and richness. Sufficient acidity preserves freshness and balance, keeping any heaviness at bay. The finish is long and flavorful, with lingering floral and spicy notes.
A Gevrey-Chambertin Village Marked by Old Vines and Sérafin's Signature Oak Aging
The Estate
Domaine Sérafin Père & Fils was founded in 1947 in Gevrey-Chambertin, in the heart of Burgundy's Côte de Nuits, by Stanislaus Sérafin, a Polish immigrant who gradually built a vineyard estate after settling in the region. The domaine remained a family affair through his son Christian, who pioneered estate bottling, and is today led by the third generation, Karine Sérafin and Frédérique Goulley, in charge of the commercial and winemaking sides respectively. Known for its old vines, generous new oak aging, and unfiltered wines, the estate remains discreet yet highly regarded among connoisseurs and fine restaurants.
The Vineyard
The grapes for this cuvée come from parcels located in the Gevrey-Chambertin appellation, many of them lying close to premier cru and grand cru sites, along with a portion on the Brochon side. The vines average between 70 and 75 years of age, a rare feature for a village-level wine that lends significant concentration and depth. The domaine farms its vineyards organically, though without certification, avoiding herbicides and favoring low yields through strict pruning and careful canopy management.
Winemaking and aging
As with the rest of the domaine's red wines, the grapes for the Gevrey-Chambertin Village "Vieilles Vignes" 2019 are fully destemmed before fermentation, which takes place in open vats using indigenous yeasts. The wine is then aged in 100% new oak barrels sourced from the renowned François Frères and Taransaud cooperages, a hallmark of the domaine's style for this cuvée. It is bottled without fining or filtration, preserving its full texture and aromatic matter.
Grape Varieties
This wine is produced from 100% pinot noir, the signature grape variety of the Côte de Nuits.
