Description
Tasting and Serving Characteristics of Chablis 2023 from Domaine Vocoret & Fils
Tasting
Color
The wine shows a pale gold color with light green highlights, a hue typical of a young Chablis.
Nose
The nose opens on orchard fruit, ripe green apple and Bosc pear, along with Meyer lemon zest, hints of peach and mango, and a mineral backdrop of crushed seashell, damp stone, chalk and slate.
Palate
The palate is crisp, energetic and bright, with a rounded citrus core of grapefruit and lemon layered over stony fruit sensations. The finish is long, saline and racy, leaving a refreshing, uplifting impression.
Food and wine pairings
This Chablis pairs beautifully with oysters and shellfish, white fish, goat cheese, sushi, and a mushroom risotto prepared without cream.
Serving and cellaring
Serve this Chablis 2023 at a temperature between 50 and 54°F. It is best enjoyed in its youth, within an optimal window of about three to five years following the harvest, roughly through 2028 or so.
Other characteristics
This dry white wine reaches 12.5% alcohol by volume and is vinified without the use of oak, allowing the natural expression of the terroir to come through. As with most wines of its type, it contains sulfites.
A Chablis True to the Mineral Character of its Appellation
The Estate
Domaine Vocoret & Fils was founded in 1870 by Edouard Vocoret and is located in the village of Chablis, in the Burgundy wine region of France. Today, the estate is run by cousins Patrice and Jérôme Vocoret, representing the fourth generation of the family at its head. The property is planted exclusively within the Chablis appellation, cultivating chardonnay alone, and is recognized for its collection of premier and grand cru vineyards alongside its village-level cuvées.
The Vineyard
The grapes for this Chablis come from vines grown entirely within the commune of Chablis, on Kimmeridgian limestone soils rich in marine fossils such as oysters, scallop shells and ammonites. This geological heritage, combined with a continental climate, shapes the mineral, saline character typical of the appellation. The estate has relied on organic soil amendments for more than forty years and favors mechanical tilling over herbicide use, while avoiding anti-botrytis treatments to preserve healthy, naturally ripened fruit.
The Vintage
The 2023 growing season in Chablis was warm and sunny, with favorable conditions through August and September that allowed the grapes to reach full ripeness. Despite the risk of spring frost common to the region, the harvest came in healthy, resulting in a vintage that is riper and more generous than the cooler 2021 and 2022 vintages, while still retaining lively acidity.
Winemaking and aging
Chablis 2023 from Domaine Vocoret & Fils is vinified without the use of oak, with no additional manipulation, allowing the chardonnay grape and its distinctive limestone terroir to express themselves with precision and purity.
Grape Varieties
This wine is made from 100% chardonnay.
