Description
Tasting and Pairing Notes for Chambertin 2021 from Domaine Denis Mortet
Tasting
Color
This Pinot Noir displays a deep, intense hue, reflecting the historic style long associated with this estate's red wines.
Palate
This wine reveals a medium-bodied structure built around remarkable tension and minerality. The tannins show a silky, pliant quality, while the finish extends with striking purity, delivering an almost ethereal sensation. The whole gives an impression of energy and finesse, true to the elegant, fleshy character the estate seeks in this grand cru, with a persistent mineral texture carrying through from start to finish.
Food and wine pairings
This wine pairs beautifully with white meats served with cream and mushroom sauces, such as a classic poultry dish enriched with a morel cream sauce. Its silky tannins and mineral tension also make it a fine companion to roasted red meats or mature cheeses.
Serving and cellaring
Chambertin 2021 benefits from careful decanting to allow its aromatic complexity to unfold. It is best served at a temperature between 60 and 64°F (16–18°C). Given its structure and the estate's own indication that time will reveal the wine's full complexity, this cuvée is intended for long-term cellaring.
Other characteristics
This wine shows an alcohol content of 14%.
A Chambertin from Domaine Denis Mortet, Marked by Tension and Finesse
The Estate
Domaine Denis Mortet was established in the early 1990s in Gevrey-Chambertin, in the heart of Burgundy's Côte de Nuits, building on a family winegrowing tradition dating back to 1956. Today, the 16-hectare estate is led by Laurence Mortet alongside her son Arnaud and daughter Clémence, following Denis Mortet's passing in 2006. Known for rigorous viticulture, old vines, and a stylistic evolution toward greater elegance and minerality, the domaine has earned international recognition, notably for its grand cru wines such as Chambertin.
The Vineyard
The Chambertin parcel, acquired in 1999, lies within one of the most prestigious climats of Gevrey-Chambertin, on the mid-slope of the hillside where the soils combine brown limestone, broken stones, and varying proportions of clay and marl. This environment allows Pinot Noir to express both power and finesse. As with the rest of the estate's holdings, the vines benefit from meticulous, largely manual farming, natural cover cropping, and the use of massal selections drawn from old family vines.
Winemaking and aging
Chambertin 2021 was vinified using 50% whole clusters, a technique the estate has applied to its old-vine cuvées since 2012 to enhance textural complexity and aromatic depth. The wine was aged in only three barrels, two of which were new, reflecting the extremely limited volume produced for this cuvée. This elevated proportion of new oak is carefully integrated, supporting the wine's structure without overshadowing its mineral character.
Grape Variety
100% Pinot Noir.
