Dark purple in color. Offers pure fruit, with crushed raspberry, blackberry and dried flowers on the nose. Full-bodied, with super-silky tannins that touch every inch of the palate. Long and racy, with elegance and beauty harking back to bygone days. Best after 2015. 6,665 cases made.

Decanter

A near perfect growing season resulted in alcohols of 14% for the Merlots and 13% for the Cabernet Sauvignons, unheard of at Haut-Bailly. This is starting to show tertiary aromatics and yet holding on to its youthful character, absolutely teetering on the edge between youth and age. The tension of this moment is something to savour, and I want to both suggest that you drink it now, and that you put it away for another decade. Hints of leather, cold ash, cassis, pepper, saffron, all with confident tannins that embrace the fruit without making a big deal of it. The definition of elegant Pessac, as with 2001 vintage, but here with another level of concentration. Just so drinkable while complex and effortless. Long harvest from September 14 through to October 11. A yield of 41hl/ha.

This shows a great purity of fruit; firm, direct notes of raspberries, strawberries, and blackberries that open to intense notes of fresh flowers. Full-bodied, with velvety tannins. This wine is tight and long — you know this is good immediately. Pull the cork after 2016.

Smoke, campfire embers, menthol, espresso, 5 spice and dark red fruit aromas hit it, just right. On the palate, the wine is soft, mineral-driven, tannic, fresh and with dusty tannins offsetting the ripe dark red berries. Still youthful and perhaps a bit tight, give it another 4-5 years in the cellar to allow for further softening and additional nuances to shine.

The 2005 Château Haut-Bailly just continues to drink brilliantly, with a massive, rich, full-bodied style as well as the château’s inherent sense of elegance and finesse. Ripe red and black fruits, smoked tobacco, graphite, saddle leather, and floral notes all define this beauty, and it has flawless balance, ripe yet perfectly integrated tannins, and just a regal, seamless, utterly compelling profile that is such a joy to drink today. It has another two decades of prime drinking ahead of it.

Barrel sample: deep ruby-purple. Noble, delicately toasty bouquet with ripe plums, cedar, coffee, cassis notes, and fine exotic woods behind; feels dense and deep. Concentrated palate, firm extract with bite, intense astringency, blue to black-berry contours, long, aromatic persistence. With this brilliant wine, Haut-Bailly is once again at the top of the Léognan appellation. 07: Red, ripe berries, white bread crust, light caramel, delicate and multi-layered. On the palate rather closed and, due to gentle compression, showing a subtly grainy note. Will need quite a lot of time to reach its first drinking window, or above all to show its true greatness. (19/20). 12: Denis Dubourdieu poured this wine to us blind in a series with his wines. The greatness was there—but the pleasure not at all. Extremely closed, peppery and firm. Can it hold the 19/20? 21: Magnum. Incredibly saturated and dark in color. Purple-cherry hue. Dense, deep, closed, velvety, complex bouquet: plums, tobacco, currants, dark fine woods, cassis and roasted hazelnuts. Concentrated, layered, finely powerful palate with intense dark fruit, plenty of fine tannin, discreetly muscular structure, multifaceted, dense aromatics, very long, powerful finish. (19/20).

A totally delicious wine that demonstrates the subtlety of Haut-Bailly, and more broadly how you don’t need to bludgeon with power to achieve exceptional quality in a glass of wine. The 2005 vintage is marked by a dry spring, a summer of warm days and cool nights, and a magnificent autumn. These exceptional weather conditions, combined with careful vineyard work, led to outstanding ripeness, with natural alcohol levels of over 14% for the Merlots and 13% for the Cabernets—unprecedented at Haut-Bailly. Harvest began on September 14 and took place over five weeks, through October 11. Picking was mainly carried out in the mornings to avoid heat spikes. Yields are low (41 hl/ha), but the result is exceptional. Some wines have the ability to quickly assert their form and their readiness to reveal themselves. Haut-Bailly 2005 does not beat around the bush. It settles in from the outset and shows exactly what it can do—shine! Such beautiful complexity, where notes of graphite, black berries, licorice and mint are perfectly harmonized. The palate fully delivers on the promises of the nose and stands out for its breadth and freshness. The tannins are creamy, silky and very fine, while the structure is precise, refreshing, and provides exceptional aromatic support. When breadth, power, finesse and freshness are in harmony, you are in the presence of a great wine.

Description

The 2007 presents a structured texture and plenty of emphasis on the palate with pure flavours. The combination of the crunchy Cabernets, and dense, fine, velvety tannins offers a wonderfully elegant wine. This is a truly classic vintage. This wine's smooth character goes perfectly with a wild duck and foie gras pie.
