The estate

The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. For generations, the members of the Ayala family have been committed to producing greatly elegant champagnes that are appreciated beyond borders, notably across the Channel, where Ayala has been the official supplier for the British crown. In 2005, the Ayala Champagne House was taken over by the family company Jacques Bollinger.

The wine

Ayala’s Brut Nature comes from the best crus in Champagne and is the perfect expression of the house’s unique, authentic know-how.

Winemaking and ageing

Precise and wonderfully pure, this cuvée is subject to nearly 4 years of ageing on lees. This cuvée has no added sugar.

Chardonnay (45%)
Pinot Noir (35%)
Pinot Meunier (20%).

Colour

The latest release of Ayala's NV Brut Nature offers up notes of apple skin, citrus oil and green herbs, followed by a medium-bodied, crisp and incisive palate with a youthfully frothy mousse, pronounced acids and bone-dry finish. It was disgorged after three and a half years sur lattes with no dosage. To my palate, this is a little green, lean and compact, its no-dosage style crying out for more fruit maturity.
