The pure expression of Chablis terroir by Famille Descombe
The Estate
Founded in 1905 in the Beaujolais region, the Famille Descombe estate has grown over the generations to encompass more than 80 hectares of vineyards, now spread across Beaujolais and Burgundy. Today, the family company is led by Marine Descombe, who oversees operations and continues to develop the estate with a contemporary vision. In Chablis, the family cultivates numerous parcels according to agroecological principles. The Famille Descombe name embodies the alliance between a century-old heritage and a modern, terroir-driven approach that respects biodiversity.
The Vineyard
The vines thrive in the Yonne department, at the heart of the Chablis winegrowing area along the banks of the Serein River. This distinctive terroir is characterized by stony, clay-limestone soils that are particularly rich in Kimmeridgian fossilized remains. The climate is continental, with rigorous conditions that forge the unique character of the grapes.
The Vintage
The 2023 growing season was marked by demanding continental weather conditions, including a particularly hot and dry month of July that strongly influenced the vegetative cycle and the ripening of the berries.
Winemaking and aging
As soon as they arrive in the winery, the grapes destined for Chablis Village "Les Oiseaux" 2023 undergo rigorous sorting. Gentle pressing is carried out at very low pressure in pneumatic presses, followed by static settling lasting from 24 to 48 hours. Fermentation starts spontaneously thanks to indigenous yeasts in temperature-controlled stainless-steel tanks. After malolactic fermentation, the wine is aged carefully on fine lees for 18 months. Each parcel is vinified separately in order to preserve the authentic expression of its terroir.
