Description
Characteristics and Tasting Notes for Mercurey Village "Les Margotons" 2022, Domaine du Cellier aux Moines
Tasting
Color
The wine shows a pale lemon-yellow color, typical of a still-young white Burgundy.
Nose
The nose is youthful and of medium intensity, opening on notes of vanilla and cream brought by the oak aging, layered with lemon, pear, peach and apple.
Palate
The palate is dry, with lively, high acidity and flavors of medium intensity that echo the nose. The structure is tight, the alcohol and body are medium, and the finish, net and precise, shows medium length.
Serving and cellaring
Mercurey Village "Les Margotons" 2022 can be enjoyed now, while its structure and acidity also give it the ability to gain further complexity with a few more years in the cellar.

The Estate
Domaine du Cellier aux Moines was founded in 2004, when Philippe and Catherine Pascal acquired this historic property in Givry, Burgundy, built around a cistercian cellar dating back to the 1120s–1130s. Today led by the Pascal family alongside technical director Guillaume Marko, the estate farms close to 11 hectares across Givry, Mercurey, Montagny and several Côte de Beaune premier crus, certified organic since 2020 and biodynamic since 2023, combining a gravity-flow winery with a deep monastic heritage.
The Vineyard
This cuvée comes from a 61-are plot known as Les Margotons, in the Mercurey appellation at the heart of the Côte Chalonnaise. Planted with chardonnay in 1987, the vines face northeast at an altitude of 318 to 328 meters, on soils of white limestone marl that bring freshness and minerality to the wine. The plot is farmed according to the estate's organic and biodynamic principles, with mechanical soil work and no synthetic herbicides or pesticides.
The Vintage
The 2022 vintage in Burgundy was marked overall by warmth, yet the northeast exposure and relatively high altitude of the Les Margotons plot helped preserve freshness in the grapes, allowing the chardonnay to reach a balanced maturity between citrus, white-fleshed and stone-fruit notes.
Winemaking and aging
For Mercurey Village "Les Margotons" 2022, the grapes are harvested by hand and gently pressed to obtain pure juice. Fermentation takes place in oak barrels, followed by an aging period of twelve months on fine lees, which brings depth and a creamy texture to the wine.
Grape Varieties
100% chardonnay.
