Tasting Notes
Appearance
The colour reveals a deep, brilliant ruby hue, with subtle violet highlights in its youth.
Nose
The aromatic bouquet opens with intense scents of ripe red fruits such as morello cherry and raspberry, enhanced by floral touches of peony. Fine spicy notes and a delicately integrated oakiness add complexity to the whole.
Palate
The attack is broad and energetic, revealing a beautifully refined tannic structure. The velvety texture stretches elegantly towards a long, fresh, satiny finish.
Food and Wine Pairing
This red wine pairs wonderfully with regional dishes such as beef bourguignon, coq au vin or roast poultry with mushrooms. It will also enhance a herb-crusted veal fillet or a porcini mushroom risotto.
Serving and Cellaring
To fully appreciate the Givry 1er Cru "Clos du Cellier aux Moines - Les Dessus" 2019, it is recommended to serve it at a temperature of 15 to 16°C, decanting it an hour before tasting if desired. This wine has fine ageing potential and can be cellared until around 2029.
The Elegance and Precision of a Givry Red Wine
The Estate
Although the winegrowing history of this site dates back to the Cistercian monks between 1120 and 1130, the Domaine du Cellier aux Moines in its current form was established in 2004 when it was taken over by Catherine and Philippe Pascal. Located in Givry, in Burgundy, this historic property has undergone meticulous restoration along with the construction of a gravity-flow winery. Under the technical direction of Guillaume Marko, the estate stands out for its nature-respecting approach, certified organic and biodynamic, placing its wines among the region's finest references.
The Vineyard
This cuvée comes from the "Les Dessus" plot, ideally situated on the upper part of the renowned historic clos of Givry. This hillside terroir, with full southern exposure, rests on shallow, well-drained clay-limestone soils. The vineyard is farmed according to biodynamic principles, with shallow soil tilling, the use of plant-based preparations and no chemical inputs, thereby fostering vine vitality and the authentic expression of the terroir.
The Vintage
The year 2019 was marked by warm, relatively dry weather in the Côte Chalonnaise. These conditions favoured high ripeness levels and lower yields, producing concentrated grapes while preserving lovely freshness.
Winemaking and Ageing
The grapes are hand-harvested with rigorous sorting carried out directly in the vineyard. In the winery, whole clusters are transferred by gravity. Fermentation begins naturally with indigenous yeasts, accompanied by punching down by foot. The Givry 1er Cru "Clos du Cellier aux Moines - Les Dessus" 2019 is then aged in oak barrels, with a proportion of new wood, for at least two winters to refine its structure before bottling, which is timed according to the lunar calendar.
