Description
A structured red Burgundy wine with cherry aromas
The estate
The Domaine du Cellier aux Moines was founded in 1130 by the Cistercian monks of the Abbey of la Ferté. These monks were the first to build the famous Clos de Burgundy. Since 2004, the Pascal family has successfully undertaken the restoration of the estate, giving it back its full vitality, with a conversion to biodynamic farming now complete.
The vineyard
In Givry, the vineyard of the Domaine du Cellier aux Moines spans 5 hectares surrounding the historic Cellier. The Clos du Cellier aux Moines Givry 1er Cru comes from this south-facing vineyard, planted on a gently ventilated hillside. The vines are farmed biodynamically on clay-limestone soils.
Winemaking
The Clos du Cellier aux Moines Givry 1er Cru is crafted from old vines, 70% of which are destemmed.

Tasting notes
The Clos du Cellier aux Moines Givry 1er Cru reveals a nose of ripe fruit, with aromas of cherry and wild dark fruits. These aromas blend with spice notes and a delicate floral touch. On the palate, a lovely framework of supple tannins takes shape. The tender aromas of candied red fruit and wild raspberry give way to spicy, peppery notes in the mid-palate, before finishing on a chalky minerality.
