Description
Tasting Notes and Characteristics of the 2005 Volnay 1er Cru "Santenots" from Domaine Ampeau Robert Et Fils
Food and wine pairings
This wine from Domaine Ampeau pairs naturally with roasted poultry such as guinea fowl or duck, as well as feathered game, particularly when served alongside forest mushroom garnishes like chanterelles or porcini that echo the earthy character typical of this style. Lighter meat stews, such as a classic coq au vin, or dishes built around rabbit or braised beef, also suit its structure well. Soft-ripened or washed-rind cheeses, including reblochon or brie, make for a fitting match, as the wine's natural acidity refreshes the palate between bites.
A Structured Red from the Volnay Appellation, Built for Aging
The Estate
Formally established as a legal entity in 1980, Domaine Ampeau Robert Et Fils is a family-run winery based in Meursault, in the heart of Burgundy, though its winegrowing roots trace back to the early twentieth century. The property is managed today by Michel Ampeau alongside co-director Karl Bühler. Spanning roughly 9.3 to 9.5 hectares across several appellations of the Côte de Beaune, the estate is recognized for its traditional approach and its unusual practice of extended cellar aging, releasing its wines only once they are considered to have reached full maturity.
The Vineyard
The fruit for this wine comes from the Santenots climat, a parcel located administratively within Meursault but classified as Volnay 1er cru for red wines made from pinot noir. The soils here are typically light clay-limestone, shallow, and resting on a base of hard limestone, with gentle slopes facing east to southeast at an elevation of roughly 230 to 280 meters. This exposure and soil profile are generally associated with red Volnay wines of notable structure and elegance.
Winemaking and aging
The grapes are harvested entirely by hand, with careful sorting carried out directly in the vineyard. Depending on the character of the vintage, the fruit is partially or fully destemmed before a gentle, extended maceration in concrete vats using indigenous yeasts, accompanied by regular pump-overs. Malolactic fermentation takes place in barrel, and aging generally lasts between 12 and 14 months, with new oak kept to a modest 10 to 20 percent. Racking is light, and the wine is bottled without aggressive filtering, consistent with the estate's long-standing preference for extended cellar aging before release. The 2005 Volnay 1er Cru "Santenots" from Domaine Ampeau follows this same traditional approach.
