Description
Savigny-Les-Beaune Premier Cru "Les Lavières" 2005: A Burgundy Pinot Noir Shaped by Domaine Ampeau's Patient Aging Philosophy
Tasting
Color
Drawing on the typical character of the Lavières climate, this wine is expected to display a ruby to garnet hue of moderate to deep intensity. After close to two decades spent maturing before release, the color may show the first subtle tile-like nuances at the rim, a sign typical of a pinot noir that has reached an advanced stage of evolution while retaining its depth.
Nose
The bouquet should reveal the red fruit character typical of Les Lavières, with cherry and raspberry notes intertwined with floral touches of violet. Given the extended bottle aging practiced by the estate, these primary aromas are likely to have evolved toward more tertiary notes of undergrowth, spice, and a subtle earthy, mineral undertone reflecting the limestone-rich soils of the climate.
Palate
The palate should be marked by fine, silky tannins and a well-integrated acidity, offering a fluid, elegant texture rather than raw power. The long stay in the estate's cellars tends to favor a harmonious balance between fruit, structure, and freshness, leading to a mineral-driven finish of good length.
Food and wine pairings
This Savigny-Les-Beaune suits medium-bodied red meats and roasted poultry, as well as dishes built around mushrooms, which echo the earthy, undergrowth notes typical of the terroir. Soft-rind or semi-firm cheeses also make a fitting match, allowing the wine's fine tannins and aromatic complexity to come through without being overwhelmed.
Serving and cellaring
The Savigny-Les-Beaune 1er cru "Lavières" 2005 benefits from being served at a moderate red Burgundy temperature, around 16 to 17°C, to fully reveal its aromatic range. Having already spent many years resting in the estate's own cellars prior to release, this vintage is ready to be enjoyed now, reflecting Domaine Ampeau Robert Et Fils' distinctive approach of only releasing its wines once they are considered to have reached proper maturity.
The Estate
Domaine Ampeau Robert Et Fils is based in Meursault, in the heart of Burgundy's Côte de Beaune. Founded in the early 20th century and structured by Robert Ampeau, the estate is now run by his son, Michel Ampeau, representing the third generation at the helm. Spanning roughly 9.3 hectares across prestigious climates in both white and red, the domaine is best known for its traditional winemaking and its unusual practice of aging wines for decades in its own cellars before releasing them onto the market.
The Vineyard
The Savigny-Les-Beaune fruit for this cuvée comes from the Les Lavières premier cru climate, located mid-slope with a south to south-southeast exposure between Beaune and Pernand-Vergelesses. The vines entered the estate's holdings in the 1940s through the maternal side of Michel Ampeau's family. The soils here are notably complex, combining limestone, clay, sandstone, and ferruginous marl, giving the climate its distinctive mineral character and its capacity to produce refined, well-structured pinot noir.
The Vintage
The 2005 vintage in Burgundy is widely regarded as an outstanding year for red wines. The growing season was marked by a warm, dry summer without excess, allowing grapes to reach excellent ripeness while preserving good acidity. These conditions favored mature tannins and a strong overall balance, giving the wines of this vintage notable aging potential.
Winemaking and aging
For the Savigny-Les-Beaune 1er cru "Lavières" 2005, the grapes were mostly destemmed before undergoing fermentation in concrete vats with indigenous yeasts, a method that favors a genuine expression of the terroir. The wine was then aged in oak barrels for about ten months, with a modest proportion of new wood, in keeping with the estate's preference for restrained oak influence. Following bottling, the wine spent many years resting in the domaine's cellars before being released, in line with Domaine Ampeau Robert Et Fils' long-standing philosophy of late release.
