Tasting
Color
This wine displays a deep, intense hue, enhanced by delicate garnet highlights.
Nose
Particularly expressive, the bouquet reveals fine ripeness through aromas of black fruit. This aromatic profile is harmoniously supported by touches of green pepper, licorice and fresh leather.
Palate
The attack is broad and enveloping, perfectly balanced by fresh, well-structured acidity and chalky tannins of great finesse. The palate offers lovely complexity, with flavors of Burlat cherry, fresh raspberry and peony, stretching into a long, saline and supremely elegant finish.
Food and wine pairings
This great wine will elevate noble red meats such as beef, lamb or game. It will also pair beautifully with more delicate dishes such as roast duck or veal, as well as blue cheeses and fine charcuterie.
Serving and aging
Château Peby Faugères 2025 has remarkable aging potential. It can be cellared and will be at its best between 10 and 30 years after the harvest, that is, until around 2055.

The estate
Located in Saint-Étienne-de-Lisse in the renowned Bordeaux region, Château Peby Faugères was founded in 1998 as a tribute to Pierre Bernard Guisez. Today, the estate is run by Silvio Denz, who acquired this gem in 2005. Elevated to Grand Cru Classé status, the vineyard stands out for its constant pursuit of excellence and its exceptional terroir. The estate's hallmark lies in its environmental commitment and modern facilities, seamlessly combining winemaking tradition with technical innovation to produce wines of rare elegance.
The vineyard
Covering 6.75 hectares, the vineyard lies on a south-southeast-facing clay-limestone slope that shares the same characteristics as the famous slopes of Saint-Émilion. The vines, some of which are nearly 50 years old, benefit from an ideal microclimate. The estate is certified organic and holds the Haute Valeur Environnementale level 3 label, reflecting a deep respect for biodiversity and the soil.
Vinification and aging
Maceration lasts 25 to 28 days. Vinification is carried out with precision in stainless steel vats, concrete vats and directly in barrels. The wine is then aged entirely in oak, with a meticulous split: one third new barrels, one third barrels previously used for one wine and one third barrels previously used for two wines.
