The producer
The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. For generations, the members of the Ayala family have been committed to producing greatly elegant champagnes that are appreciated beyond borders, notably across the Channel, where Ayala has been the official supplier for the British crown. In 2005, the Ayala Champagne House was taken over by the family company Bollinger.
The wine
Produced in limited quantities and only during exceptional vintages, this Blanc de Blancs 2015 by Ayala magnifies the elegance and the purest expression of the great terroirs of the Côte des Blancs in Champagne. This cuvée comprises grapes from three Grands Crus (Chouilly, Cramant, Le Mesnil-sur-Oger) and a selection of exceptional Premiers Crus (Cuis, Vertus).
Vinification and ageing
Ayala's Blanc de Blancs 2015 is aged in the cellar for 6 years on its lees. The dosage is 6 g/litre.

The tasting
Colour
The bright colour reveals a beautiful white gold hue. The effervescence is very delicate.
Nose
The fresh and aromatic nose blends floral fragrances (orange blossom) and yuzu zest with subtle notes of ginger.
Palate
The lively attack is followed by a full and delicious palate that blends notes of white fruit, acacia honey and citrus fruit with a delicious pastry note. The finish is persistent and seductive with its chalky minerality.

Enjoy as an apéritif, Ayala's Blanc de Blancs 2015 pairs perfectly with a variety of dishes such as sea bream ceviche with lemon, prawn risotto or pan-seared veal fondant with rosemary.
