The Richness and Balance of a Volnay Premier Cru Wine
The Estate
Founded in 1731, the Bouchard Père & Fils House is one of the oldest and most respected houses in Burgundy. This historic estate owns a 3.76-hectare plot in the Premier Cru "Caillerets," acquired as early as 1775. The mention "Ancienne Cuvée Carnot" recalls the Carnot family, former owners, and highlights the historical importance of this vineyard for the house.
The Vineyard
Patiently built up over the years, the vineyard of Domaine Bouchard Père et Fils now spans 130 hectares. Bringing together prestigious appellations with exceptional plots, the Bouchard Père & Fils vineyard represents a unique winegrowing heritage in Burgundy.
The Wine
Located on a fissured rocky plateau, the vineyard benefits from an ideal southeast exposure. The soils consist of a thin layer of clay-limestone, favoring the cultivation of pinot noir. The total area of this Volnay vineyard is 14.33 hectares, of which 3.76 hectares belong to Domaine Bouchard.
Winemaking and Aging
The grapes are harvested by hand, with a rigorous sorting of the clusters. Fermentation takes place in small vats after total or partial destemming, followed by gentle pressing. Maceration lasts 15 to 20 days depending on the vintage profile. The wine is then aged in French oak barrels for 12 to 14 months, with 30 to 40% new oak, allowing it to develop its richness and complexity.
