Characteristics and Tasting Notes of the Chablis Village "La Sereine" 2023 by La Chablisienne
Tasting
Color
The wine displays a pale gold color, clear and brilliant, with light golden to bronze highlights.
Nose
The nose opens discreetly, with delicate notes of green apple, bergamot and vanilla. With aeration, it becomes more expressive, revealing citrus and exotic fruit notes such as lychee and grapefruit, alongside hints of brioche and lightly buttered bread.
Palate
The attack is energetic and fresh, giving way to a dense, rich palate with an enveloping texture. The finish lingers on zesty lime and lemon notes, bringing a touch of elegant bitterness and remarkable length.
Food and wine pairings
This Chablis is well suited to an aperitif with gougères, and pairs beautifully with pasta dishes featuring clams, such as linguine alle vongole. More broadly, it is a fine match for seafood, shellfish, poultry, and lightly spiced dishes.
Serving and cellaring
The Chablis Village "La Sereine" 2023 is noted for its strong aging potential, suggesting that it can evolve favorably over several years in the cellar.
Other characteristics
This Chablis presents an alcohol content of 12.5%.
La Sereine, a Chablis Shaped by Kimmeridgian Terroir
The Estate
La Chablisienne is an agricultural cooperative founded in 1947 through the merger of earlier cooperative structures, and today stands as one of the leading producers in the Chablis appellation, in the heart of Burgundy. The cooperative brings together close to 300 winegrowers across roughly 1,200 to 1,256 hectares. It is currently led by Damien Leclerc, director general since 2008, who has focused the estate's strategy on brand development and quality across the full range of Chablis appellations.
The Vineyard
The grapes for this cuvée come from clay-limestone soils of Kimmeridgian origin, spread across all the communes of the Chablis appellation and benefiting from a variety of exposures. The vines are planted at a density of 5,500 to 6,500 vines per hectare and have an average age of about 30 years, contributing to balanced, concentrated fruit.
Winemaking and aging
The Chablis Village "La Sereine" 2023 undergoes a cold static settling of the must before fermentation. Both alcoholic and malolactic fermentations take place in stainless steel tanks, followed by an aging period of approximately twelve months on fine lees, carried out in both tanks and barrels.
Grape Varieties
This wine is made from 100% chardonnay.
