Description
Characteristics and tasting notes of the 2023 Sancerre "Les Romains" Domaine Vacheron
Tasting
Color
The color reveals a luminous pale yellow hue, enhanced by brilliant green highlights.
Nose
The aromatic bouquet opens with a pronounced minerality, evoking gunflint. It then reveals citrus aromas such as lemon and grapefruit, intertwined with herbaceous notes, white flowers and delicate saline nuances.
Palate
The palate stands out for its purity, clarity and contained power. The wine's structure rests on a crystalline mineral backbone, complemented by flavors of white peach, pear and honeysuckle, along with a subtle spicy touch. The finish, long and enveloping, unfolds with lovely salinity.
Food and wine pairing
This white wine pairs perfectly with poached or baked white fish, raw seafood such as oysters, as well as sushi. It also pairs wonderfully with fresh goat cheeses, or dishes based on green vegetables and asparagus.
Service and storage
For optimal tasting, it is recommended to serve this wine at a temperature between 9 and 12°C. It can be enjoyed from 2025 and will continue to evolve favorably until around 2035.
The pure expression of terroir by Domaine Vacheron
The estate
Founded at the beginning of the 20th century, Domaine Vacheron is an iconic figure in the Loire Valley in France. Located in the heart of the medieval town, this family estate spans 70 hectares, including 50 hectares of vines. Today, cousins Jean-Dominique and Jean-Laurent Vacheron run the estate. Pioneers in their approach, they obtained biodynamic certification in 2006. The estate is renowned for its meticulous plot-by-plot approach and its determination to let the geological identity of each terroir express itself.
The vineyard
The Sancerre "Les Romains" cuvée comes from a historic plot located in the eastern part of the Sancerre appellation. Reaching an altitude of around 320 meters and benefiting from a south-west exposure, this terroir rests exclusively on flint soils. The vines, aged between 20 and 50 years, are cultivated according to biodynamic principles. Harvesting is entirely manual, with strictly limited yields and successive sorting to pick only the berries at optimal ripeness.
The vintage
2023 offered climatic conditions that allowed for a very successful balance between berry ripeness and the preservation of a lovely acidity, essential to the growing cycle and the wine's future structure.
Winemaking and aging
Vinification is carried out with minimal intervention. Fermentation is triggered by indigenous yeasts in large oak vats. The wine then undergoes extended aging for a period of one year in these same wooden vessels, before being bottled without any filtration in order to preserve all its complexity.
Grape variety
Sauvignon Blanc (100%).
