Description
Tasting Notes and Pairing Suggestions for the Bourgogne Aligoté 2023 from Domaine Sylvain Morey
Tasting
Color
This white wine displays the pale, bright hue typical of a young white Burgundy, promising freshness from the very first glance.
Nose
The nose opens on lively citrus notes, with lime standing out as the dominant aromatic marker of this cuvée.
Palate
The palate is vivid and precise, carried by a fine, structuring bitterness that echoes the citrus register of the nose. The overall impression is one of great energy and easy drinkability, with a balanced, fresh finish that avoids any heaviness.
Food and wine pairings
Thanks to its citrusy character and lively structure, this Bourgogne Aligoté is well suited to serve as an aperitif or alongside light, fresh dishes. It pairs nicely with seafood, grilled fish, shellfish, or dishes built around raw preparations, where its acidity and fine bitterness provide an elegant counterpoint.
Serving and cellaring
The Bourgogne Aligoté 2023 from Domaine Sylvain Morey is best enjoyed well chilled, as its vibrant, citrus-driven profile calls for a cool serving temperature that highlights its freshness and energy.
Other characteristics
This is a dry white wine. It was bottled without fining or filtration, a choice that preserves its natural texture and allows the wine to express itself with authenticity.
A Bourgogne Aligoté Shaped by the Terroir of Chassagne-Montrachet
The Estate
Domaine Sylvain Morey was established in 2014 in Chassagne-Montrachet, in the heart of Burgundy, when Sylvain Morey took over part of his father Jean-Marc Morey's family vines. Sylvain Morey, who also runs a domaine in the Luberon, is at the helm of this Burgundy property today. Rooted in a winegrowing family long associated with Chassagne-Montrachet, the estate follows an environmentally mindful approach to viticulture and a gentle, low-intervention style of winemaking.
The Vineyard
This Bourgogne Aligoté comes from a single plot located in Chassagne-Montrachet, planted in 1997 with a clonal selection of aligoté. The vines grow at an altitude of 210 meters, facing east, on clay-limestone soils. The plot benefits from a high planting density of 10,000 vines per hectare and is trained using the Guyot trellising method, reflecting traditional Burgundy practices aimed at concentration and balance.
The Vintage
The 2023 growing season in Burgundy is described by the estate as an excellent one, marked by an alternation of beneficial rainfall, windy spells, and cool temperatures throughout the season, which allowed for a well-balanced harvest. Despite warmer temperatures around the time of picking, in mid-September, the fruit retained freshness, resulting in wines that are easy to drink, fine, and free of excess.
Winemaking and aging
For the Bourgogne Aligoté 2023, the grapes were harvested by hand and pressed whole-cluster, directly, to preserve purity of juice. Fermentation occurred spontaneously, relying on indigenous yeasts, in 350-liter barrels. The wine was then aged for 18 months on fine lees in these same barrels, with no new oak used, before being bottled without fining or filtration on a "fruit day," following the biodynamic calendar, in February 2025.
Grape Varieties
100 % aligoté.
