Tasting

Appearance

A pale to medium gold-tinged robe, reflecting the youthfulness of this wine.

Nose

Discreet and refined, the bouquet reveals aromas of fresh citrus such as lemon, white grapefruit and lime. It then opens onto delicate notes of white flowers, acacia and poached pear, underscored by a minerality evoking gunflint, oyster shell and chalk dust.

Palate

Medium-bodied, the palate stands out for its linear structure and precision. A vibrant citrus acidity carries flavours of orchard fruits and stone fruits, perfectly integrated into a mineral and saline tension. The finish, of a beautiful length, prolongs this freshness with subtle herbaceous touches.

Food and wine pairings

This wine pairs ideally with fresh seafood such as oysters, or pan-seared scallops. It also goes very well with white fish in a creamy sauce (turbot, sole), roast poultry with mushrooms, a seafood risotto or even aged hard cheeses such as gruyère.

Serving and cellaring

This 2023 Puligny-Montrachet requires a little patience to reveal its full potential. It is advisable to wait two to three years before tasting it, and it will continue to evolve in the cellar until around 2038.

The estate

While the presence of the Carillon family in the vineyards of Burgundy has been documented since 1520, Domaine Jacques Carillon was officially established in 2010, following the division of the family estate. Now run by Jacques Carillon and his wife Sylvia, this estate of around 5.5 hectares is located in the heart of the Côte de Beaune. Renowned for their traditional and minimalist approach, the couple produce wines of great precision, favouring the authentic expression of the terroir through controlled yields and a deep respect for the vine.

The vineyard

The estate spans ideally located plots, mostly within the Puligny-Montrachet appellation, with a few vines in the neighbouring villages. Resting on limestone-rich soils, the vineyard benefits, for certain plots, from a northern exposure that helps preserve the freshness of the berries. Vineyard management is inspired by environmentally friendly methods: herbicides are completely banned in favour of mechanical and manual work of the soils. Severe pruning, rigorous debudding and green harvesting are practised to guarantee optimal concentration of the grapes.

The vintage

The year 2023 stands out as a particularly warm vintage, surpassing the temperatures of 2022. These weather conditions made it possible to achieve perfect physiological ripeness of the berries. In order to preserve the natural acidity and freshness essential to the balance of the wines, the harvest was carried out early in the morning.

Winemaking and aging

The grapes of this 2023 Puligny-Montrachet are harvested exclusively by hand in perforated crates, then gently pressed using a pneumatic press. True to its non-interventionist philosophy, the estate favours ageing of 12 to 18 months in oak barrels, with a very limited proportion of new wood (15 to 20%). The wine is then racked into stainless steel tanks where it rests for a further six months before bottling.
