Tasting
Appearance
The wine reveals a deep, luminous colour, dressed in a dense ruby hue with violet highlights, reflecting beautiful clarity.
Nose
The aromatic expression opens with superb notes of red fruits, both rich and wonderfully fresh. Aromas of strawberry, blackberry and cherry emerge, delicately wrapped in floral and balsamic nuances.
Palate
On the palate, this wine proves crunchy, juicy and full-bodied. Its generous breadth is matched by great elegance, carried by discreet, silky tannins. A persistent tension and a freshness typical of limestone terroirs run throughout the tasting, offering a strikingly saline signature all the way to a long, drawn-out and vibrant finish.
Food and wine pairing
This great red wine will pair wonderfully with roasted or grilled meats, such as a rack of lamb, a rib of beef or a tournedos. It will also enhance feathered game, poultry served with mushrooms, as well as vegetarian dishes such as a porcini risotto. To finish the meal, aged hard cheeses will make an ideal choice.
Serving and cellaring
To fully appreciate Château Canon 2025, it is recommended to serve it at a temperature between 16 and 18°C. In its youth, decanting for two to three hours will help release all its aromas. With remarkable ageing potential, this vintage can be enjoyed until around 2050.
The limestone elegance of a great Saint-Émilion crafted by Château Canon
The estate
Founded in 1760, Château Canon has established itself as a true benchmark of prestige within the Bordeaux region. Acquired in 1996 by the Wertheimer family (owners of the House of Chanel), this Premier Grand Cru Classé spans approximately 34 hectares. Now led by Nicolas Audebert, the estate combines French luxury with the pure expression of its terroir, elevating its wines among the most sought-after of its appellation.
The vineyard
Ideally located at the top of the Saint-Émilion limestone plateau, the vineyard dedicated to the grand vin covers 24 hectares. The vines, averaging over 30 years old, thrive on clay-limestone soils resting on a bedrock of starfish limestone. The estate is farmed organically, incorporating agro-ecological practices such as the use of cover crops and the preservation of biodiversity.
The vintage
The year began with a rather mild and dry winter, followed by a wet and cool spring marked by a heatwave at the end of April. The summer season proved particularly hot and arid, before giving way to cooler weather conditions during the harvest period.
Vinification and ageing
The making of Château Canon 2025 begins with a rigorous plot-by-plot approach. The grapes are received by gravity before being vinified in temperature-controlled stainless steel vats. Ageing then takes place over 16 to 18 months in the heart of the estate's underground quarries. It is carried out with 49% new oak barrels and 7% large casks. Alcohol content: 14% vol.
