Description
Characteristics and Tasting Notes of Cuvée Nicolas François Billecart 2012 from Billecart-Salmon
Tasting
Appearance
This exceptional champagne displays a stunning golden yellow color with radiant, golden highlights.
Nose
The bouquet shows impressive intensity and remarkable fruit richness, enhanced by mineral complexity and aromas of great maturity. Subtle notes of orchard fruits, stone fruits, and nuts (almonds, mirabelle plum) join with hints of citrus (clementine flesh). A refined floral persistence (acacia, hawthorn) completes this outstanding aromatic profile.
Food and Wine Pairings
This exceptional champagne pairs beautifully with delicate dishes such as sole with lemon butter or veal chop with chanterelles. Its structure and complexity also allow it to complement more elaborate dishes based on noble fish or white meats.
Serving and Cellaring
To fully enjoy Cuvée Nicolas François Billecart 2012, serve it at cellar temperature (12°C).
Other Characteristics
This champagne features a particularly low dosage of 3.8 g/l, offering great purity of expression and remarkable aromatic precision.
An Exceptional Champagne from the Finest Terroirs of the Montagne de Reims and Côte des Blancs
The Estate
Since its founding in 1818 by Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving its expertise and commitment to quality in its cuvées for seven generations.
The Vineyard
The vineyard of the Billecart-Salmon House stretches from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and tended in the traditional way to achieve authentic fruit and reflect the quality of the Champagne terroir.
The Wine
Cuvée Nicolas François Billecart was created in 1964 as a tribute to the House’s founder.
Vinification and Aging
Cuvée Nicolas François Billecart 2012 benefits from meticulous parcel-based vinification. Ten percent of the wines are vinified in traditional oak barrels, bringing complexity and structure to the final blend. The champagne is then aged for 120 months on lees, an exceptionally long period that imparts great aromatic depth and an incomparable texture.
Grape Varieties
This 2012 vintage champagne is the result of a blend of pinot noir (60%) and chardonnay (40%).
