Medium to full-bodied, chiseled and long, it has a crystalline yet vinous texture with a fresh, salty finish. It is a quintessential representation of Billecart's style, characterized by racy acids and a lively palate. It derives from Chardonnay grapes sourced from the villages of Mesnil-sur-Oger, Chouilly and Cramant and was aged exclusively in steel tanks.

100% Chardonnay from grands crus of the Côtes des Blancs: 21% Chouilly, 58% Cramant, 21% Mesnil-sur-Oger. Dosage 3.75 g/l. Partial malo. 100% vinification in tank before 144 months' ageing on lees. This is certainly not austere but there's not much sign of the richness of the vintage either. This is still extraordinarily taut for a 14-year-old wine. Dense and set for the long term. Very tightly wound – so don't serve this too cold. It deserves to unwind a bit and show its nuance and lacy delicacy – it should to be left to open out in the glass. Admirably persistent. (JR)

The 2009 Brut Blancs de Blancs Louis Salmon is a rich, heady wine. In 2009, Billecart-Salmon opted not to use lots aged in oak, which, along with partially blocked malolactic fermentation, helps explain the wine's freshness and verve. Lemon peel, white flowers, white pepper and chalk are all beautifully delineated. There's gorgeous density and power here, along with a good bit of vintage 2009 radiance. What a gorgeous Champagne this is. The Louis Salmon is a blend from Mesnil-sur-Oger, Chouilly and Cramant. Dosage is 3.75 grams per litre. Disgorged: second trimester 2022.

The 2009 Champagne Blanc De Blancs Louis Salmon Brut comes from Mesnil, Cramant and Chouilly and was all fermented in stainless steel tank. Since 2009 was a warmer vintage, they did not use wood, as they were looking to preserve the freshness of the wine. A seductive wine that’s almost identical in appearance to the 2017 Blanc de Blancs, this 2009 jumps from the glass with a buoyant personality in its perfume of lemon custard, honeysuckle, fresh brioche, a hint of almond, and juicy pear. Full-bodied, its wonderfully rich texture coats the palate with citrus oils, and it has a finish that won’t quit. It balances its warmth and solar feel with a lovely embrace and retains a powerful yet balanced finish. Drink 2024-2040. 3.8 grams per liter dosage.

A lovely brioche-like palette with dried fruits and cereal notes. The expression is beautifully ripe and generous. The palate is broader and the style differs from the 2008 vintage. This is a comfortable Blanc de Blancs with chew and a spherical sense of volume. The juice is full, with lovely harmony.

The minerality and elegance of a vintage champagne

The estate

Since it was founded in 1818 by Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained independent, retaining all its know-how and the exacting quality of its cuvées for 7 generations.

The vineyard

The Billecart-Salmon vineyards stretch from the Côte des Blancs to the Montagne de Reims, covering almost 100 hectares. The vines are cultivated and cared for in the traditional way to produce authentic fruit and reflect the quality of the Champagne terroir.

The wine

This bottle is a tribute to Elisabeth Salmon's brother Louis, a passionate oenologist who was very involved in the wine-making process right from the creation of the estate. Cuvée Louis Salmon Blanc de Blancs 2009 expresses the best Grand Cru plots in the Côte des Blancs: Cramant and Chouilly for finesse, Avize for power and Mesnil-sur-Oger for structure and longevity.

Winemaking and ageing

Vinification takes place in stainless steel vats. Ageing on lees in the house's underground cellars for 12 years. The dosage is 3.75 g/l.

Tasting

Colour
The champagne has a pale gold colour with hints of yellow and green, and a remarkable sheen.

Nose
Elegant and complex, the nose opens with fragrances of hazelnut and citrus pulp (mandarin). Aeration reveals pure, crystalline aromas (raw butter and fresh honey) conferred by the chalky soil of the estate's terroirs.

Palate
The palate is precise, enticing with its smooth feel and chiselled finesse. The balance and power of the palate combine with a rich palette of aromas (marzipan, flaky brioche, white fruit and white pepper). The finish is long and lingering, with aromas of fresh mango and cardamom.

Food and wine pairing

With its purity and precision, Billecart-Salmon's Cuvée Louis Salmon Blanc de Blancs 2009 is an ideal match for Corrèze veal sweetbreads or a creamy shellfish risotto.

For the best tasting, serve between 10 and 12°C.
