Tasting
Color
Bright and adorned with subtle salmon reflections, the color is supported by a beautiful effervescence.
Nose
Opening on sweet and refreshing fruity fragrances (red and black berries), the nose reveals its maturity and richness over time. Blueberry, gooseberry currants, peony are all notes finding a tasty echo with notes of roses and violets.
Palate
Ample and captivating, the palate exhales delicious pastry aromas (panettone, cherry clafoutis) up to a finish with chalky notes, cedar wood and blood orange jelly.
Food and wine pairing
This Cuvée Elisabeth Salmon Rosé 2012 from Billecart-Salmon pairs ideally with Bresse poultry with crayfish or even Breton royal langoustines.
Service and aging
For optimal tasting, serve between 11 and 12°C. This champagne can be kept in cellars for more than 10 years.

The property
Since its creation in 1818 by the spouses Elisabeth Salmon and Nicolas-François Billecart, the Champagne Billecart-Salmon House has remained independent, preserving for 7 generations the entirety of its know-how and the demand for the quality of its cuvées.
The vineyard
The vineyard of the Billecart-Salmon House extends from the Côte des Blancs to the Montagne de Reims over nearly 100 hectares. The vines are cultivated and cared for in a traditional way in order to get closer to an authentic fruit and reflect the quality of these great Champagne terroirs.
The wine
This cuvée Elisabeth Salmon is a real tribute to the co-founder of the House. The soul of this extraordinary woman is found in this champagne with a unique character and unparalleled brilliance and purity.
Created in 1988, this tribute cuvée finds in this 2012 edition a noble and pure expression of the great terroirs of grand and premier cru champagnes.
Vinification and aging
8% of the pinot noir in this cuvée is vinified in red from grapes from old vines in Mareuil-sur-Aÿ. Aging of 2.90% of the wines in barrels. Maturation on lees for about 9 years. The dosage of this Rosé champagne is 3.8 g/liter.
Blend
This vintage champagne 2012 is the result of a blend of chardonnay (55%) from Chouilly, Avize and Mesnil-sur-Oger as well as pinot noir (45%) from Mareuil-sur-Aÿ and Verzenay.
