Description
Tasting Characteristics and Notes for Selon Moi 2022 Josselin Bouet
Tasting ColorSelon Moi 2022 displays a distinctive hue, slightly deeper than the average Muscadet, the result of a brief micro-oxygenation achieved by letting the whole clusters rest in crates for half a day before pressing.
NoseThe nose is clean and precise, led by notes of citrus and stone fruit, wrapped in subtle mineral nuances that reveal the schist origins of the terroir.
PalateOn the palate, the wine captivates with refreshing acidity and remarkable clarity, where the citrus and stone fruit aromas perceived on the nose reappear, carried by a discreet mineral thread that extends the finish.
Other CharacteristicsWith an alcohol content of 12% vol and a total sulfur addition of 47 mg/L made after fermentation, Selon Moi 2022 shows measured balance, typical of dry wines from Muscadet Sèvre-et-Maine.
Selon Moi 2022, a Mineral Muscadet Sèvre-et-Maine from Le Pallet by Josselin Bouet
The EstateFounded in 2019 by Josselin Bouet, the eponymous estate today spans 10.5 hectares in Le Pallet, a communal cru of Muscadet Sèvre-et-Maine, southeast of Nantes. Josselin Bouet personally leads the brand, which he has built around demanding viticulture, currently in conversion to Demeter biodynamic certification. The estate grows Melon de Bourgogne on rare soils of schist, orthogneiss, and micaschist, which give the wines a pronounced minerality and vibrant freshness, exemplified by the Selon Moi cuvée.
The VineyardSelon Moi 2022 comes from a 3-hectare plot planted at an altitude of 30 meters, in the commune of Le Pallet, a communal cru of the Muscadet Sèvre-et-Maine appellation. The soil here is shallow, barely 40 centimeters deep before reaching the metamorphic bedrock, composed entirely of micaschist, a rare substrate that gives Melon de Bourgogne its distinctive minerality. The vines, approximately 30 years old, are trained using the Guyot Nantais method and are cultivated in conversion to Demeter biodynamic farming, certified Certipaq FR-BIO-09-58278.
Winemaking and AgingFor Selon Moi 2022, the grapes are harvested in September, then left as whole clusters to rest in crates for half a day, inducing a slight micro-oxygenation before pressing. Fermentation takes place with whole clusters, at a temperature of 20°C (68°F), over 25 days. The wine is then aged for 18 months on the lees in underground tiled concrete tanks, before a single sulfur addition of 47 mg/L is made after fermentation.
Grape VarietySelon Moi 2022 is made from 100% Melon de Bourgogne.
