Color
The color is clear and bright.
Nose
The nose reveals a beautiful floral intensity with scents of hawthorn and acacia. Citrus aromas mingle with notes of herbal tea and warm stone. The aromatic palette becomes more complex with touches of candied lemon, yellow fruit, and white fruit, accompanied by nuances of dried fruit and lees. A discreet mineral impression completes the ensemble.
Palate
The palate is taut and chiseled, deploying a straight and dense structure. Deep minerality expresses itself alongside a beautiful structuring acidity. The finish, saline and persistent, offers remarkable length.
Food and wine pairings
This Savennières pairs perfectly with delicate fish and seafood. It also goes well with poultry in sauce or aged goat cheeses.
Service and cellaring
The Roche aux Moines 2023 is best enjoyed at a temperature between 12 and 13°C. This wine can be appreciated from 2025 and will continue to evolve until around 2035.
An age-worthy Savennières from an exceptional Loire Valley terroir
The estate
Created in 1981 by Monique and Tessa Laroche in the Loire Valley, Domaine aux Moines spans 12 hectares in the heart of the Savennières Roche-aux-Moines appellation. Managed today by Tessa Laroche, the estate cultivates exclusively Chenin Blanc on a terroir of schist and sandstone benefiting from an exceptional south-southwest exposure. Converted to organic farming in 2009 and then to biodynamics, the estate represents more than half of this confidential 22-hectare appellation. This dominant position, combined with respectful viticultural practices and a historic terroir shaped since the 12th century by Cistercian monks, gives the wines remarkable mineral purity and great aging potential.
The vineyard
The Roche aux Moines vineyard covers 10 hectares of sandstone schist and volcanic rocks. The vines, 49 years old on average, benefit from a privileged south-southwest exposure on the right bank of the Loire. Cultivated using Ecocert-certified organic farming and biodynamics, they are harvested manually in successive passes to select golden grapes. The controlled yield of 30 hl/ha makes it possible to obtain grapes of exceptional quality fully expressing the unique character of this Savennières terroir.
Winemaking and aging
The Roche aux Moines 2023 is vinified using traditional methods that respect the fruit. After direct pressing in a pneumatic press, the musts are cold-settled for about 48 hours at a temperature of 12-13°C. Fermentation takes place with indigenous yeasts. Aging takes place entirely in barrels and foudres for 18 months. Bottling was carried out at the estate on April 23 and 24, 2025.
